What do i need to know about carriage doors?

I am pretty good a woodworking (meaning i am detailed on cuts, measurements and problem solving) and want to try my hand at making custom carriage garage doors.... Just looking for advice on hinges (type, grade), insulating the door, type of wood to use... just to clarify. i can do quality work i just don't know technical specs Doors require.
